• Ingredients: Sabudana, potatoes, peanuts, green chilies, cumin seeds, curry leaves, ghee, salt, sugar, lemon juice.
• Instructions:
  1. Rinse the sabudana thoroughly and soak it in water for a few hours or overnight until it swells up and becomes soft.
  2. Drain any excess water from the soaked sabudana and keep it aside.
  3. Heat ghee in a pan, add cumin seeds, curry leaves, chopped green chilies, and roasted peanuts. Sauté until fragrant.
  4. Add diced potatoes and cook until they are tender.
  5. Add the soaked sabudana to the pan, along with salt, sugar, and a squeeze of lemon juice. Mix well and cook until the sabudana turns translucent.
  6. Garnish with chopped coriander leaves and serve hot.

2. Sabudana Vada:

• Ingredients: Sabudana, boiled potatoes, roasted peanuts, green chilies, ginger, cumin seeds, coriander leaves, salt, oil for frying.

• Ingredients: Sabudana, milk, sugar, cardamom powder, saffron strands, chopped nuts (cashews, almonds, pistachios).

  2. Boil milk in a heavy-bottomed pan and add soaked sabudana to it. Cook on low heat until sabudana becomes translucent and soft.
